Caramelized Chocolate Chunk Banana Bread

I love love loveeee banana bread! It's perfect for a sweet breakfast or a little afternoon snack! At my house there are usually a few super ripe bananas laying around towards the end of the week and this recipe is perfect to use those up instead of tossing them aside. This recipe is very similar to my "Banana Nut Muffin" recipe but has a few different steps. This loaf has a whole banana on top split lengthwise and then topped with demerara sugar to get it nice and caramelized and of course a few extra chocolate chunks.
