Pistachio Matcha Financiers
These cute little cookies are perfect for the holiday season, the pistachio/matcha batter makes them a nice green. Finished with some freeze dried raspberries, they are the perfect Christmas treat.
Financiers are cake-like little cookies usually made with hazelnut or almond flour. This recipe uses ground pistachios, matcha, and whole wheat flour. Matcha gives it a nice little bitterness, while the whole wheat flour gives some sweetness. For an extra sweetness, I dip them in white chocolate and sprinkle with freeze dried raspberries.
