Mediteranean Pasta Salad
This dish is perfect for summer barbecues or a nice refreshing lunch on a hot day. Packed with flavor and a good amount of veggies, this could be eaten on its own or used as a side dish. I love the combination of feta, tomatoes and cucumbers so I thought why not add it to some penne with Italian dressing and some chickpeas! I also love throwing in a lot of herbs to make it light and refreshing - parsley, dill and chives work great here!
My favorite thing about pasta salad is that its a great way to empty out your fridge at the end of the week with all the veggies you hadn't gotten too yet.
Some great combos include:
-corn, cilantro, red bell pepper and green onion
-tomato, fresh mozzarella pearls, basil and a balsamic based dressing
-green olives, green onion and blanched asparagus
Just cook a box of pasta of your liking (I like penne or rigatoni for mine) according to the boxes instructions. Cool down under cold water after you've cooked it, toss in your chopped veggies or cheeses, add some dressing and mix together!
I also like cutting the vegetables in different shapes and sizes to add some texture as well.
