Thai Peanut Noodle Salad

This dish is a staple in my weekday for dinner or lunch! Super easy to prep and holds well in the fridge for at least 3-4 days. Super refreshing and light, yet very filling! To add some more protein you can always add some chicken or crispy tofu. I love how fresh the cilantro and lime juice makes the salad, it goes pretty quick at my house!
This dressing is also a great recipe for a side dip for wontons, potstickers, or when making a hot pad Thai dish with shrimp or chicken! The ginger really shines through creating a light yet savory dressing! Now lets get to the recipe!
